It is brewed slowly and carefully using 100% highly polished Yamada-Nishiki rice from the special A district of Hyogo Prefecture, up to 35%. This sake has a mellow flavour that maximises the fruit-like ginjo aroma and the flavour of the rice. Charming nose with fresh cheese, honey and nuts. Juicy fruit on the palate with chestnut and spicy complexity. Long finish of almond.
