At the tozuzoe stage of the sake manufacturing method "Sandan Shikomi", a portion of the brewing water is mixed with sake. For this reason, the alcohol concentration at the beginning of the brewing is as high as 9-10%, which suppresses the growth of yeast and leaves a large amount of sugar in the moromi, which would normally be use for fermentation, resulting in a very rich, creamy and extremely sweet moromi. It is characterized by a complex flavour that contains various elements such as sweetness, sourness, and richness like ripped fruit.
