Mitsutake Junmai Ginjo has an elegant and ornate scent, and a slightly rough mouthfeel of sake that are most impressive. The taste of the juicy rice is felt firmly. Making koji is a gem that the delicious taste unique to small barges and traditional handmade technique brings, because it also takes time and labor by a method called an old-fashioned box koji.
